Banana Coffee Cake

This tasty coffee cake, topped off with a crunchy coconut crumble, is a great way to use up ripe bananas.

Ingredients:

Topping:

  • 3 cups Toasted Oats cereal, crushed
  • 1 cup firmly packed brown sugar
  • 1/2 cup shredded coconut
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter or margarine

Cake:

  • 1 1/2 cups firmly packed brown sugar
  • 3/4 cup butter or margarine
  • 1 cup mashed bananas
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

Directions:

  1. Heat oven to 350°F.
  2. In a medium bowl, combine all topping ingredients except butter. Cut in butter until crumbly; set aside.
  3. In a large bowl, cream 1-1/2 cups brown sugar and 3/4 cup butter until light and fluffy.
  4. Add bananas, egg and vanilla; mix well.
  5. Blend flour, salt, baking soda and 1 teaspoon cinnamon into creamed mixture.
  6. Spread into a greased 15 x 10 x 1-inch pan. Sprinkle topping over batter, pressing in lightly.
  7. Bake for 25 minutes or until golden brown.
