Banana Coffee Cake
This tasty coffee cake, topped off with a crunchy coconut crumble, is a great way to use up ripe bananas.
Ingredients:
Topping:
- 3 cups Toasted Oats cereal, crushed
- 1 cup firmly packed brown sugar
- 1/2 cup shredded coconut
- 1/2 teaspoon cinnamon
- 1/2 cup butter or margarine
Cake:
- 1 1/2 cups firmly packed brown sugar
- 3/4 cup butter or margarine
- 1 cup mashed bananas
- 1 egg
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
Directions:
- Heat oven to 350°F.
- In a medium bowl, combine all topping ingredients except butter. Cut in butter until crumbly; set aside.
- In a large bowl, cream 1-1/2 cups brown sugar and 3/4 cup butter until light and fluffy.
- Add bananas, egg and vanilla; mix well.
- Blend flour, salt, baking soda and 1 teaspoon cinnamon into creamed mixture.
- Spread into a greased 15 x 10 x 1-inch pan. Sprinkle topping over batter, pressing in lightly.
- Bake for 25 minutes or until golden brown.
